I’m continuing my detox weekend with a cleanse here at home. I love making the one-dish meals. It has everything you need…protein, vegetables, warmth and TLC.
Cook up some dry navy beans. (Not sure why they are called navy since they are white) You can use canned beans to save some time.
Sauté chopped onions with a tablespoon of olive oil–any kind you have in the fridge will do. As the onions soften, add chopped celery, carrots. Continue to sauté they the celery begins to soften. Add beans, add vegetable stock.
I used organic chicken stock in a tetra box from the health food store. Vegetable stock is also an option. Add about a tablespoon of dried Italian herbs.
Let it boil then turn it low to simmer. Start with about 1 tablespoon of curry powder. If you like it stronger you can add more. Add chopped okra and chopped kale once all the veggies in the pot are soft and voila!! Delicious, healthy and quick.
