You can make it for lunch or dinner. It will take you 10 minutes to make this meal.

2 pieces of toast. I love Dimpilmeier Breads. This time I used their 7 Grain
2 pieces of salmon filet. I used Costco’s frozen wild salmon. They are individually packed. Be sure to thaw them out prior to cooking. Quick thaw–soak the individual salmon packs in a bowl with cold water. It will take about 10-12 minutes to thaw.
In a glass baking dish, drizzle toasted sesame oil (approx 2-3 tablespoons) Add some dry seasoning like mixed Italian herb or French mixed herb. Mrs. Dash is also wonderful to use as it has no salt.
Bake the salmon in toaster or regular oven for 18 minutes at 350 degrees.
1 1/2 half tablespoons of chopped capers
3 tablespoons of chopped fresh dill
3 tablespoons of chopped red onion
Zest of 1/2 lemon
Juice of 1/2 lemon
1 1/2 tablespoons of olive oil mayonnaise or which ever kind of mayo you prefer or none at all.
2 handfuls of arugula
1 handful of sprouted sunflower sprouts
Using a fork, break up the salmon into small pieces
add all the ingredients except for the arugula and sprouts and mix together.
Place a small handful of arugula and sprouts on the toasted bread.
Add two large spoonfuls of the salmon mix onto toast and spread it around the toast.
VOILA!!! Delicious and super easy light meal is ready to enjoy.
