If you like a little sweet, a little tang, some spice and salt in your dish, well then, you must try this recipe!! By the way this dish doesn’t have to be vegetarian. Shrimp or chicken breast would go really well in this dish too. This dish is really irresistible. The flavour of the noodles, the tangy dressing and the crunchy vegetables makes this dish a 10/10 and therefore sharing it with you all.
Soba is the Japanese name for buckwheat. It usually refers to thin noodles made from buckwheat flour, or a combination of buckwheat and wheat flours. Be sure to buy soba that is 100% buckwheat especially of you are gluten-free and/or celiac as it is free of gluten. It doesn’t leave you bloated!!! What’s great about soba noodles is it is delicious served hot or cold so great for salads like this. You can buy soba noodles pretty much everywhere, health food stores definitely carries it but I bought mine at my local grocery store. Go get some. :-))
You can make the dressing ahead of time. It can keep for a couple of weeks. I love having left over dressing!!
1/3 cup toasted sesame oil
4 tablespoons rice wine vinegar
2 tablespoons of tahini
2 tablespoon tamari
2 tablespoon of pure maple syrup
2 garlic cloves – grated
1 lime – juiced
1 red chile – finely chopped – if you like a little spice
Mix all the ingredients together and set aside.
One package of extra firm tofu cut into bite size cubes.
1/4 cup of tamari
1/3 cup of cold water
Place tofu cubes in a container and pour tamari/water mixture in and place in the fridge for 4-6 hours to marinate. You can forgo the marinating as an option.
1/2 of red, orange, yellow pepper diced
1/3 cup green onions chopped
1/2 cup of chopped cilantro
1/2 cup of thai or regular basil
1/2 cup of english cucumber
1 cup of chopped broccoli
1 package (225grams) soba noodles
Follow the directions on the packaging to cook the noodles. Once its almost cooked, drop in the broccoli. I leave it in there for about 2 minutes. This saves from having to drag out another pot to blanche the broccoli. Why not. :-)) Drain everything into a colander and rinse with cold water thoroughly. Get as much of the water out of the noodles/broccoli and place it large serving bowl. Add the vegetables, dressing, toss, garnish with tofu cubes and be sure not to eat this entire dish by yourself before you serve it…its that good.
