Anyone looking to improve their eating habits? Do you find yourself eating lots of green colour vegetables and not eating enough of the other colours of the rainbow? Here is one to put in your books, easy to make, colourful and tasty!!
2 cups shredded peeled carrots — I cut slices on an angle, stacked them, then cut into small strips
2 cups shredded peeled beets — I used a grater, large holes
1 cup chopped toasted pecans — put in toaster oven for 7-8 mins
1/4 chopped green onions/scallions
1/4 cup chopped fresh flat leaf parsley
1/2 cup extra virgin olive oil
Zest of one orange
1/4 cup squeezed orange juice
2 tablespoons apple cider vinegar
1 teaspoon ground cumin
salt/pepper to taste.
Mix all the salad ingredients together.
Combine dressing ingredients on top of salad ingredients, toss and VOILA!!!
